There are no tricks when making this healthy veggie burgers, all you need is the listed ingredients and a healthy dose of confidence. You can also add your own herbs and spices, and experiment with other veggies.
4 Healthy Vegan Burger Recipes!
The first two vegan burger recipes are basically the same, so don’t use both veggies in the same burger. You can also mix them, if you want to experiment and that will be great, but add another egg to the mix, if you use the listed amount. Keep in mind that some veggies, like okra are a little soggy and little too wet, so you may need to use some extra flour to get the consistency of a burger:
Zucchini Burger Recipe Vs. Cauliflower Burger Recipe
Ingredients:
- 2 zucchinis or the same amount of cauliflower
- One egg
- Small onion, minced
- A tiny garlic clove, minced
- 2/3 to one cup of bread crumbs
- Salt and pepper
- Seasoning to taste: parsley, basil, chives, dill, marjoram, onions, oregano and etc.
Preparation:
Start by grating the zucchinis or cauliflower. Place them in a deep bowl so you can easily add the rest of the ingredients without making too much mess. Add the egg and mix it well with the grated veggies. Add the onion and garlic, which should be finely minced. Once the mixture is even, start adding the bread crumbs. Add them gradually, while still mixing the blend in the bowl, to avoid making it too dry. In the meantime, preheat the oven to 400 degrees F. Find a shallow baking pan and cover the bottom with a piece of baking sheet. Take two spoons of the mix and make a meat ball. Lay it on top of the baking sheet and flatten it out like a burger. Bake the veggie burgers for 25 – 35 minutes, or until the top is golden brown.
Okra Burger Recipe Vs. Sweet Potato Burger Recipe
Ingredients:
- 2 cups of okra or sweet potatoes
- One egg
- ½ cup of yellow corn flour
- Salt and pepper
- Seasoning to taste: parsley, basil, chives, dill, marjoram, onions, oregano and etc.
Preparation:
Chop the okra or grate the potatoes. You can also use the blender or food processor, but these tools will turn the mix into an uncooked pate. Mix the eggs into the veggies, add the spices and slowly mix in the corn flour. Once you get the consistency you like, make them into meatballs and flatten them out on a baking sheet. Bake for 30 – 40 minutes at 400 degrees F, or until their top becomes golden brown.
Cooking tips and tricks:
If you’re savvy in the kitchen, you may already know some tricks when dealing with sticky mixtures. If you’re working with your hands, you may have a hard time peeling the burger mix of your hands. So before you start forming the meatballs, drip a little oil on your hands to make the balls slide of your hands.
If you’re not a savvy cook and you don’t like to get your hands sticky, use two large spoons and scrape the meatball between them. It will still stick, so use the oil trick on the spoons too.
