Real Spicy Chicken Bits

  • 3 boneless, skinless chicken breasts, cut into bite size pieces
  • 2 jalapeno peppers, sliced (deseeded if you can’t stand too much hot)
  • 1 green or red bell pepper, chopped
  • 1 large chili pepper, chopped
  • 1 tablespoon red pepper, crushed
  • 8 ounces chicken broth, low sodium
  • 1/2 cup green onions, chopped
  • 4 teaspoons of soy sauce
  • 2 teaspoons of olive oil
  • 1 teaspoon ginger, ground
  • 1 teaspoon garlic, minced
  • Pepper and salt to taste

Put all ingredients in a large (4quart) cooking pot overnight to marinade. Preheat the oven to 400 F and cover the pot with aluminum foil. Place it in the oven and bake for 40 minutes. Lower the heat to 350-375 degrees F and take the foil off the pot. Bake for another 20-30 minutes, or until the top becomes crispy and dark red.

Tender Chicken Tenderloins

  • 1 pound chicken tenderloins (about 6-7)
  • 1/3 cup coconut flour
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black or white pepper
  • Around 1/2 teaspoon smoked paprika, ground
  • 4-5 tablespoons of cayenne pepper
  • 1/2 teaspoon of garlic powder (optional)
  • 1/2 teaspoon of onion powder (optional)
  • 2 tablespoons parmesan, grated (optional)

Mix the flour and spices in a shallow plate. Rub olive oil on each tenderloin and dip it in the flour mix. Place them in a greased baking pan, and place them in a preheat oven. Bake on high heat, 400 degrees for 15 minutes, flip them on the other side and bake them for another 10 to 15 minutes. Sprinkle the parmesan on top, lower the heat a bit and wait for the cheese to become brown and runny. Best served with a spicy dip.

Mid-West Spicy Chicken Recipes

  • 2 medium chickens, halved
  • 1 tablespoon black pepper
  • 4 large eggs
  • 2 cups whole milk or buttermilk
  • 2 tablespoons hot sauce, like Texas Pete or Tabasco (vinegar-based is best as it softens the meat)
  • 4 cups flour, all-purpose
  • 4 tablespoons cayenne pepper
  • 2 tablespoons dark brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 ½ tsp salt
  • 1/4 cup olive oil
  • 4 potatoes and 2 onions as a side dish

Lightly whisk the eggs, hot sauce and milk in a bowl. On a large piece of paper mix the flour with the powders and spices and pour the sugar, salt and pepper on another piece of paper. Preheat the oven to 350 degrees and start preparing the chicken. Oil each half and dip it in the sugar mix, then dip it in the egg mix, and finally in the spicy flour mix. Cut the onions and potatoes into circles and arrange them at the bottom of a greased Dutch oven. If you have any remaining spice mixes you can mix them with ½ cup of water, and use the mix to cover the potatoes. Place the marinated pieces of chicken on top and cover the pot with a lid. Make sure the potatoes are completely covered with the spicy water, otherwise they will turn dry during the cooking. Bake for 40 minutes at 350 degrees and remove the lid for the remaining 20-30 minutes. If you used all of the egg mix and the spice mix for the chicken, you can also use low sodium broth to cover the potatoes and onions at the bottom.

Devilish Chicken Legs

  • A bag of chicken drumsticks 12-14
  • 1 red bell pepper, chopped
  • 1 large chili pepper, chopped
  • One cup of chicken broth
  • 1-2 garlic cloves, minced
  • 1 teaspoon ginger, fresh and finely minced
  • 2-3 spoons of olive oil

For spicy chicken recipes like this, start by mixing all ingredients and dipping the drumstick in the mix. Let them sit in the spicy mixture for at least 3 hours. Preheat the oven to 425 degrees. Find a nice pot with a lid, or use a regular baking dish and aluminum foil. Grease the pot with oil, add the drumsticks and cover them with the marinate mix. Close the pan with a lid or aluminum foil and keep it in the oven for an hour on high heat.

Cooking tips and tricks:

Using the oven to prepare spicy chicken recipes is certainly the healthier choice, but be careful not to spill the oil. Although it won’t be a terrible idea, there are other ways to make the chicken tender and juicy. If after the first 40 minutes, the contents look too dry, mix ½ cup of water with buttermilk and spices and drip the mix over each chicken piece. It will be best to leave the chicken in the desired mix overnight, so it has time to take on all the different aromas and flavors. To save time and make a wholesome meal at the same time, you can always add bite size chunks of sweet or regular potatoes to the pot, as well as onions, green beans, carrots or beets. Just make sure you cover them with water and spices, to make them heavenly tender and fragrant.
