Easy Russian Salad Recipe

The Russian salad is very easy to make. It requires almost no cooking and it’s done in less than 15 minutes. There are a few variations, but you can add ingredients of choice, to make it richer, fattier, or completely vegan. If you always wanted to learn to make something that will stay fresh for even a week in the fridge, then this easy Russian salad recipe is meant for you. The exact recipe of the original Olivier salad is still a secret. Chef Olivier took it with him in his grave. Another chef in his restaurant only thought he stole the recipe, when in fact, the recipe he reinvented was something entirely different. We can only imagine what the original one tasted like, but for our modern needs, this one will do just fine.

Easy Russian Salad Recipe


  • 3 large potatoes
  • 4 eggs
  • 8 oz ham
  • 6 large pickles
  • Cheese
  • Mayonnaise or sour cream


Boil the potatoes and eggs and let them cool off. Take a large plate or container with a lid, if you don’t plan on eating it in one sitting. Using a grater, start building your Russian salad over the plate. Start with one layer of potatoes, sprinkle some salt and pepper. Grate the pickles and eggs next, and seal the layers with either mayonnaise or sour cream. Then grate ham and cheese, then add another layer of mayo. Start all over again until there are no ingredients left, and cover the entire salad with a thin layer of mayo or sour cream. Eat away!


Cooking tips and tricks

If you’re not a fan of ham or any of the ingredients we listed, you can add your own. Some people boil chicken breasts instead of ham, and you can add more pickles, green beans, green peas, carrots or any other veggies your family is fond of. If this is not a salad you will be eating on one sitting, make sure you keep it in a locked container in the fridge. It can stay up to a week if refrigerated. You can use it as a spread or in a veggie wrap, or serve it as a side dish. Using sour cream is certainly less caloric than using mayonnaise, so if you worry about your weight, make sure you season your sour cream with herbs and spices.
