If you get tired of mashed potatoes and want to try some other tasty side dish, you should try this mashed cauliflower recipe. It takes the same amount to make, as a mashed potato dish, around 20 -30 minutes, depending on your organizational and cooking skills. As opposed to mashed potatoes, which are full of carbohydrates, mashed cauliflower is a healthy version of this side dish. If you still want to kick it up a notch, you can add potatoes, carrots, broccoli or peas, or keep it clean and stick to these ingredients.
Easy Mashed Cauliflower Recipe
- 1 cauliflower head
- 1/2 cup cream cheese
- 1/2 cup hard cheese, parmesan or cottage
- 2 tablespoon butter
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
Bring a pot of water to a boiling point and add the cauliflower. It will soften faster if you divide the cauliflower to florets. Boil them for 5 – 10 minutes, remove from heat and drain. Place the cauliflower in a food processor, or use a masher to grind the pieces into an even paste. Add the butter, which should be melted or at room temperature, so it will easily blend with the ingredients.
Make sure you work fast and don’t let the cauliflower florets cool off. The heat will melt the cheeses better, and help the aromas blend in well with each other. Add the cheeses, salt, pepper and garlic, and mix everything together. Transfer to a serving bowl and top with spring onions, bacon, or meat from your main dish.
Cooking tips and tricks
If you want to save some time and boil the entire cauliflower head, make sure you place it upright in the pot. The entire head will cook around 5 minutes more than the florets. If you steam it, it will take up the same amount of time, only the healthy nutrients won’t disappear. If you’re more fond of the oven, for this mashed cauliflower recipe, you can even bake the florets. Just season them and sprinkle some oil, then use the masher or food processor for the final outcome.
