With the holidays on the way, this easy Christmas cookie recipe will come in handy. It’s easy to make, easy to decorate and very, very tasty. The decoration part is actually the hardest part when making these Christmas cookies. They take only 15 minutes to make and around 15 minutes to bake, so Santa can enjoy a tasty cookie without much efforts on your part. Still, with the right amount of enthusiasm and Christmas spirit, you can make this year’s cookies to look adorable. Feel free to sprinkle sprinkles as ornaments, or edible glitter as snow. Easy Christmas Cookie Recipe
- 3 eggs
- 1 cup of sugar
- 1 cup of flour
- 1 teaspoon baking soda
- 1/2 cup butter, melted
- 2/3 cup cocoa
Preheat the oven to around 350 degrees. Prepare a baking pan for your cookies, by buttering the bottom. Oval pans are great if you want to cut the cake into Christmas trees. You can still bake the cake in a square shaped pan, but the trees might turn out crooked, in case you mind.
Beat the eggs with mixer until foamy, them start adding the sugar one tablespoon at a time. Add the cocoa as well and beat some more. Once the eggs turn fluffy, you should turn the mixer off and continue whisking by hand. That way, the cake won’t rise too much and will rise in the oven instead. So, mix in the baking soda and flour, until well combined. And finally, mix in the butter as well. When all ingredients blend well, pour the batter in the pan and transfer to the oven.
Bake for 20 – 30 minutes, and do the toothpick test to make sure your cake is ready. Let it completely cool off, then cut like a pizza. Transfer the little trees to the counter and decorate.
Christmas cookies tips and tricks
You can use confectioners’ sugar as show, but also coconut flakes or white sprinkles. To make the decorating cream, beat one egg white and 3 tablespoons of sugar until firm, then stir in food coloring and just a dash of vinegar to make sure the cream stays firm.
