Baked Potato Recipes – 3ways to a Potato Side Dish

These baked potato recipes will be your go-to side dish recipes when you’re out of ideas on what to prepare with that roast sitting in your oven. They are fast and easily prepared, and you can serve them with all types of meats and fish. Almost all recipes listed can be prepared in a baking dish, aluminum foil or over baking paper, but the baking time may differ a little. While in a baking dish, you can chop them smaller, and add water or broth to make them cook faster, baked on baking paper will take 20 minutes longer. Baked on paper, they may turn out a little dry. But you can cut them open, grind some cheese on top and add your own signature sign to this simple side dish.

Classic Baked Potato Recipe


  • Medium size potatoes
  • 1 tsp olive oil
  • 2 tsp butter
  • 1 pinch salt and pepper
  • 1/4 cup Cheddar cheese, shredded
  • Red hot peppers


Scrub the potatoes really well, wash them and rub them with olive oil. Poke a few holes in each side, so the juices can run out during baking. Sprinkle salt and pepper on each and transfer them on a baking sheet. Scoop a small amount of butter with a spoon, and place it under every potato. Bake at 300 degrees F for 90 minutes. In the meantime, chop the peppers finely and mix them with the remaining butter and the shredded cheese. 10 – 15 minutes before they are done, cut the tops and open the potatoes so that each can fit at least one teaspoon of the spicy cheese mix. Bake until the cheese melts and starts to drip over the baked potatoes.

Spring Baked Potato Recipe


  • 4 medium potatoes
  • 1 large spring onion
  • 1 small red onion
  • 2 stalks of celery
  • One egg
  • 1/3 cup of sour cream
  • 1 tsp butter
  • 1 tbsp oil
  • Salt and pepper, or spices to taste


Scrub and wash the potatoes, and let them dry. In the meantime, preheat the oven to around 350 degrees F. Place a piece of baking sheet in a baking pan, and mark the place for each potato with a tiny scoop of butter. Poke holes in each potato and rub with oil. Place in the oven and bake for one hour. In the meantime, chop the veggies and mix them with the oil, butter and seasoning. After an hour of baking, take the potatoes out of the oven, cut the top in the middle and scoop one tablespoon of the veggie mix in each potato. Bake for another 20 – 30 minutes, or until the topping starts looking tasty.

Spicy Oven Baked Potatoes


  • 4 large potatoes
  • Fresh ginger
  • Pepper and salt
  • Sesame seeds
  • Coriander
  • Butter or margarine
  • One teaspoon coconut oil, softened


This potato side dish will go well with pork, barbeque, turkey and chicken. If the potatoes are young, you can just scrub the skin really well, if not, skin them and cut them in 1 inch pieces. They will marinate better and you can bake them faster. Chop the ginger in thin strips, so they can cook well and let their aroma and flavor into the potato. For a pound of potatoes, you can skin and chop two thumb size pieces of ginger. For a pound of potatoes you will need a tablespoon of seeds and a little less than a handful of herbs.

Mix all seeds and spices in one bowl and potatoes and ginger in another. Cover the potato mix with one teaspoon of coconut oil and the melted butter or margarine. Season with salt and pepper, then sprinkle the herbs. Mix everything well and transfer over a large piece of aluminum foil. Fold the foil, so that it wraps the potatoes inside and leave enough room in the foil, for them to breathe and simmer in the heat.

35 to 45 minutes in an oven preheated to 450degrees F will be enough for this tasty baked potatoe recipe to be done. Feel free to un-wrap the foil 5-10 minutes before the potatoes are baked, to roast their top.

Cooking tips and tricks

When trying baked potato recipes it’s always safest to start small. That means smaller potatoes, so you can test the baking time and the functionality of your oven. If you suspect your potatoes will still turn out a little dry, take them out of the oven and open their top with a knife. Wiggle the knife inside a little bit and drip some oil. Baked potatoes are best on the middle rack in the oven, at around 300 degrees F.
