Green Veggie Omelet

Ingredients:

 

  • 1 cup of broccoli and cauliflower
  • 1 cup of spinach
  • ½ cup of green beans
  • 5 eggs
  • Spices of choice

Preparation:

Start by cutting all veggies in small size chunks. Simmer olive oil on medium heat and stir in the vegetables. In a deep bowl scramble the eggs, add a tablespoon (or 2) of water and add the spices. When the veggies start to soften, pour the eggs in the skillet. They should be done in around 5-7 minutes, depends on how runny you like them.

Sausage Frittata

Ingredients:

  • 1 bunch of dark greens
  • 1 1½ cup of uncooked sausage
  • 6 to 10 eggs

Preparation:

Preheat a baking pan to 375 degrees F. Crush the sausage until it resembles minced meat. Chop the greens roughly. Fry the sausage on high heat until it darkens, then add the greens. Lower the heat to medium-low and simmer until the sausage is almost cooked. Whisk the eggs and pour them in the sausage mix. Stir them a bit, shake the baking pan until the eggs are evenly distributed and place it in the oven. Your breakfast frittata should be done in less than 20 minutes.

American Omelet

Ingredients:

  • 6 – 8 eggs
  • 8 – 10 ounces bacon, cubed
  • 4 long scallions
  • A tablespoon of butter
  • Salt, pepper and spices to taste

Preparation:

Scramble the eggs, adding a few tablespoons of water as you mix them. Slice the scallions in chunks, 1/3 of an inch thick. In a medium size skillet, melt the butter and fry the scallions and bacon until the bacon becomes crispy. Set them aside on a plate. On the same skillet, pour half of the scrambled eggs and tilt the skillet in all directions. That will be the base for the omelet. Leave it on medium heat for around a minute, then add the bacon and scallions on the top. Pour the remaining egg mix on top. Lower the heat to low and keep them on the stove for another 2-3 minutes, or until the top of the omelet is cooked.

Spicy Breakfast Omelet

Ingredients:

  • 1 ½ cup of fresh peppers, red and green
  • 5-7 eggs
  • 5-6 ounces sausage
  • Salt and pepper to taste

Preparation:

Slice the peppers and sausage in circles. Half circles if you are not that comfortable with the kitchen knife. Fry the sausages on high heat at first, but lower the temperature when you add the peppers, which is after 1-3 minutes. Lightly whisk the eggs and add the spices. Pour them over the sausage and peppers and tilt the skillet. When they bind all ingredients together, lower the heat and simmer until you achieve the consistency you like.

Cooking tips and tricks:

When cooking an omelet, always add a couple of tablespoons of water as you whisk. This will make them more fluffy. Instead of using low heat at the end, consider turning the heat completely off and leaving the skillet on the stove a little longer. Cooking eggs on high heat will make them rubbery and dry.
