4 Easy Pate Recipes

On those days when you have no time to cook, it will be great to know these pate recipes. Pate is a European dish, typically made out of minced meat and fat. The French usually bake it in a crust and serve it as a pie, but we’ll stick to the spread version for now. If you want to avoid the fats that come with the traditional pate recipe, we have another, less fatty and more healthy version. It’s a fast way to a wholesome snack, even breakfast and dinner.

Traditional Liver Pate Recipes

Ingredients:

  • 1 pound livers, chicken or duck
  • 1 small onion, minced
  • 1 small garlic, minced
  • Salt and pepper to taste
  • Seasoning, usually ground thyme
  • 1/2 cup of water
  • 2 sticks butter
  • A dash of cognac

Preparation:

Use a medium to large saucepan and melt half a butter stick. Add the livers, onions, garlic and seasoning to the saucepan. Turn the heat to low and add the water. Simmer everything for around 3 to 5 minutes, since livers don’t take long before they’re done. Transfer everything into a blender and process until they become and even paste. Add butter one spoon at a time, to avoid making your paste too greasy and finally add a dash of cognac. Test the pate to make sure it’s salty enough and transfer it into a serving bowl or dish.

Chicken Breast Pate Recipe

Ingredients:

  • 4 chicken breasts, boiled
  • 1 small garlic clove
  • ½ cup of sour cream
  • Freshly chopped thyme
  • Salt and pepper

Preparation:

It’s best to boil the chicken, because it will remain softer for this pate recipe. Add all the ingredients in a food processor, adding the garlic and seasoning first, then the meat. Pour the sour cream slowly, to avoid turning your pate into a watery paste. Once you get the consistency you like, transfer everything into serving cups and serve with homemade crackers or bread.

Vegan Pate Recipe

Ingredients:

  • 1 eggplant
  • 2 large carrots
  • 1 large potato
  • ½ cup of walnuts
  • ½ cup of pumpkin seeds
  • Drizzle of olive oil

Preparation:

Bake the vegetables in a large pan, seasoned with herbs like coriander, thyme, salt and pepper. Potatoes and carrots need more time to cook than eggplants, so keep that in mind. You can also boil them while the eggplants are baking. In the mean time, blend the nuts together in a food processor. Once the veggies are done, transfer everything into the food processor and make a nice even mixture. Serve with crackers as an appetizer or over fresh homemade nut bread.

Spicy Vegan Pate Recipe

Ingredients:

  • 1 1/2 cup cauliflower
  • 2 small sized potatoes
  • 1 can of chickpeas
  • 2 red hot peppers

Preparation:

Boil the veggies and fry the peppers. Peppers don’t need too much heat for too long, but keep the oil you fried them in. it’s quite pungent and you can add it to the pate. Once the potatoes and cauliflower are done, mix everything together in a food processor.

Cooking tips and tricks

Although a pate is fairly easy to make, since it requires almost no cooking and special touches, you can still make it taste bland and yucky. To enhance its taste, you can heat up some oil and fry the herbs for 20 – 30 seconds, so they can release their plentiful aromas into the oil. Only then you can cook the liver or chicken. In the vegan pate recipe, you can try the same, but also make sure you season the veggies before you bake them. That will be faster and less messy. The ingredients we listed will be enough for 4 people, but if you want to make more, double the dose and keep the pate refrigerated.
