Classic Homemade Pumpkin Pie Recipe

Ingredients:

  • Pie crust dough, 9-inch
  • 3 eggs
  • 1/2 cup sugar
  • 1/3 cup light brown sugar
  • 2 cups fresh pumpkin puree, or 15-ounce pumpkin puree can
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla, ground
  • 1 teaspoon cinnamon, ground
  • 1/4 teaspoon cloves, ground
  • 1/2 teaspoon ginger, ground
  • 1/3 teaspoon salt

Preparation:
Prepare your baking pie dish by greasing. Roll out the dough, but be careful not to stretch it too thin. Trim it at the top, within ½ inch of the dish edge. Keep it refrigerated and start the pie filling.
Place the sugars in a bowl, cover with the eggs and whisk until smooth. Add the puree, salt, vanilla, cinnamon, ginger, cloves and gradually add the whipping cream. Stir the filling until smooth and blended. Pour pumpkin filling into the pie shell and bake in oven preheated to 425 degrees for 15 minutes. Reduce the temperature to 375 degrees and bake for another 40 – 50 minutes.
When a toothpick comes out clean when plunged in the pie, it usually means the pie is done. Let it cool on a wire rack for at leas 2 hours. You can cover the cooled pie with foil and keep in the refrigerator up to 3 days.

Sweet and Tasty Homemade Pumpkin Pie Recipes

Ingredients:

  • 2 cups pumpkin puree
  • 1 cup heavy cream or evaporated milk
  • 1 tablespoon All-Purpose flour
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon ginger, ground
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon cloves, ground
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 3 eggs

Preparation:
In a bowl, mix the sugars, spices and flour. Add the eggs and whisk until they blend. Add the pumpkin, whisk until smooth, and finally, mix in the cream or milk. Prepare the crust as well, and then pour the filling inside. Fold the edges of the crust inside and place in a preheated oven to 425 degrees F. Bake for 20 minutes, then lower heat to 100 degrees and bake another 40 – 50 minutes.

Spicy Homemade Pumpkin Pie Recipes

Ingredients:

  • 2 cups pumpkin puree, homemade or store bought
  • 1 cup heavy cream or condensed milk
  • 1 tablespoon All-Purpose flour
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon ginger, ground
  • 1 teaspoon chili powder
  • 1/8 teaspoon cloves, ground
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 eggs

Preparation:
In a deep bowl, mix the sugars, flour and all spices except the chili. Crack the eggs on top and whisk until everything blends. Start adding the puree, whisk until smooth, then, pour in the cream or milk. Sprinkle the chili and refrigerate the filling for at least a couple of hours.
In the meantime, prepare the crust and preheat the oven to 425 degrees F. Fill the crust with the filling and fold the edges inside. Bake at 425 degrees F for 20 minutes, then another 40 – 50 minutes at 345 degrees F.
Let it cool off before serving, and refrigerate or keep in a dark, cool room covered with foil.

Cooking tips and tricks

Before making these easy homemade pumpkin pie recipes, always wait for the oven to heat to the right temperature before placing the dish inside. Use oven mitts when you place the dish inside, as the heat may burn your skin.

When checking if the pie is done, stab the toothpick somewhere at the side, not at the center of the pie. The center can still be wobbly and moist, since it will cook while the pie cools down. Don’t overbake the pie, as it will dry out all the moisture, which is the magic trick to all good pumpkin pie recipes.
